Contains a number of substances including proteins, sugars, mineral salts, alkaloids, oils, caoutchouc, etc., and rapidly coagulates on exposure to air. Function of latex not clearly understood but thought to be concerned in nutrition and in protection and healing of wounds. Latex of a number of species is collected and used in manufacture of several commercial products, most important being rubber.
